Strawberry, Watermelon & Mint Mojito
Serves 8
This is great as the Volvic Touch of Fruit Strawberry does a lot of the work in this refreshing and elegant mocktail. The rest is just fresh ingredients of watermelon, mint and ice: perfect to chill under a tree and take shade with.

Ingredients
- 750ml of Volvic Touch of Fruit Strawberry
- 750ml Watermelon juice
- 1 large handful of Mint
- Fresh fruit to garnish

Method
- Fill a large jug with ice
- Add the Volvic Touch of Fruit Strawberry, watermelon juice and fresh mint
- Stir well and pour into a tumbler
- Garnish with fresh fruit

Mango Passion Martini
Serves 8
Inspired by Volvic Touch of Fruit Mango Passion, this mouth-watering mocktail is a stunner. Bursting with Passion Fruit flavour, this cooling combination is perfectly served over ice and takes summer refreshment to the next level.

Ingredients
- 1.5l of Volvic Touch of Fruit Mango Passion
- 250 grams of Passion Fruit puree
- 4 x fresh Passion Fruits

Method
- Fill a large jug with ice
- Add the Volvic Touch of Fruit Mango Passion and Passion Fruit puree
- Stir well and pour into a martini glass
- Garnish with a halved Passion Fruit

Muffaletta
Serves 8-10
I love to get together with friends and family for a good picnic, but finding something a little different to traditional finger food to bring to the party can be tricky, that’s why I love doing my version of a muffaletta. It looks great, is easy to prepare in advance, has self-contained storage (the loaf), there are plenty of vegetarian options available and most importantly, it tastes wonderful!

Ingredients
- 1 x fresh italian round loaf or crusty loaf (approx 660g)
- 250 grams of chopped green olives
- 100 grams of pitted and chopped ‘black ripe’ olives
- 200 grams of jarred roasted red peppers
- 1 x generous handful of flatleaf parsley, chopped
- 2 x tbsp of white wine vinegar
- 100 grams of sliced salami
- 200 grams of sliced jarlsberg
- 200 grams of mozzarella
- 200 grams of jarred artichoke hearts in oil, reserve oil
- 100 grams of smoked ham

Method
- Take your crusty loaf and cut it horizontally in half. Scoop out a little of the fresh dough inside to make room for the filling
- Mix the green olives with the vingar, 100mls of the artichoke oil and chopped parsley
- Starting from the bottom of the loaf, spoon in half the olive mixture and the artichokes, followed by a layer of the mozzarella
- Next, spoon in the black olives and cover with a layer of salami, followed by the smoked ham and jarlsberg. Place each of these in layers, one on top of the other
- Top with the rest of the olive mix and the roasted peppers
- Place the lid on the loaf and tuck in all the filling
- Using a tea towel, secure the two halves together, ensuring the mixture cannot leak out
- Add a second layer of cloth, before turning the muffaletta upside down and placing in the fridge
- Stack a couple of plates on top to weigh the muffaletta down and compress the bread into the filling
- Leave for at least 2 hours in the fridge, before serving

Strawberry Showstopper
Makes 1x Strawberry Showstopper
Inspired by Volvic Touch of Fruit Strawberry, and the summer flavours of mint and meringue. This tempered chocolate dome is decorated as a strawberry. Once cracked open, fresh whole strawberries and mint burst out accompanied by meringue kisses. A showstopper that captures the essence of British summer, inspired by Volvic Touch of Fruit.

Equipment
- 1 x 3L Pyrex bowl (as the mould)
- 1 x thermometer
- 4 x medium saucepan
- 1 x metal or heatproof glass bowl

Ingredients
- 600 grams of dark chocolate
- Green modelling/sugar paste
- Edible red food spray
- Black food colouring pen
- 20 x mini meringues
- 4 x punnets of strawberries
- 1 x small handful of mint leaves

Method
- Break the chocolate into small pieces and place 2/3rd in a heatproof bowl over gently simmering water
- Heat the chocolate to exactly 55°c, remove from the heat and add in the remaining 1/3rd chocolate - once added, keep stirring until melted and the temperature reduces to 27-28°c
- Return the bowl to the heat and bring the chocolate back up to 31-32°c (no hotter or you will need to restart)
- Pour chocolate into mould bowl, spreading the chocolate all around the side, keep going until the chocolate sets and you have an even and smooth shell, ensure you get the chocolate all the way to the edge and that it is not too thin or fragile
- Place the bowl in the fridge for 10 minutes to set. Once set, the chocolate shell should pop out of the bowl with relative ease
- Whilst upside down fill the chocolate shell with the strawberries, mint and meringue; then place plate over opening
- Holding the plate on top, flip the shell over so it is the right way up and you have a dome
- Spray the dome with the red food spray and allow to dry
- Roll out the green modelling paste to roughly 0.5cm thick and using a plate cut it into a 15cm circle
- Using a small knife and starting near the middle of the circle, cut leaf shapes all the way round until left with what looks like a flower shape
- Place this on top of the dome allowing some of the leaves to lay flat against it and some angled upwards
- Take another small piece of modelling paste and roll it into a tube shape then place this in the middle of the leaf design to act as the stem
- To finish, draw seeds on the strawberry using the food pen and it is ready to serve
- If not serving right away store in the fridge to keep fresh.
